The unique flora and fauna add to the overall flavor profile of the drink fermented and aged on site. While much ofthe research into microbiome and whiskey production have taken place in the United Kingdom, such as Walker and Hill’sstudy on S. cerevisiae and microorganisms introduced into the brew in Scotland (Walker and Hill, 2016), there is a lack ofsuch studies in the United States. The goal of our study is to identify the flora and fauna extant in the brew fermented toprovide the raw product for distillation into whiskey, however. Using genomic sequencing, we aim to develop a profile of thebrew’s microbiome at various points during the fermentation, and with this knowledge produce a time-based
