In this case, I was introduced to a unique type of salt crystal while visiting Robert Smithson's Spiral Jetty on the shore of the Great Salt Lake. A woman showed me, and there they were, inverted ziggurats growing from the bottom of a shallow pool. The unexpected can sweep your mind into the current of memory so fast that before you know it you're thousands of years in the past and halfway around the world. Fluid memories of stepped pyramids lying deep in the sedimented layers of my mind, deposited there by a class in ancient history and by the books I read and dreamed with long ago. It's said that collecting is an attempt to use visible, material objects to connect with ideas, concepts and feelings that are invisible, out of reach of our physical senses. Wonder and mystery, however, give way to curiosity, and the urge to find things out. This curiosity led to research, and resulted in this book. The natural form of a salt crystal is a cube, as you see if you look at table salt with a magnifying glass. But if you examine fleur de sel the same way, you see at a small scale the same pyramidal structure as in the crystals we found. It's called a hopper crystal. The crystal starts out as a cube, but due to conditions in the salty water, the edges grow faster than the middles of the faces. In the case of fleur de sel, the hopper crystals transfer more salt taste to the mouth than the cubes, because they dissolve more easily. This fact has not escaped the notice of the Frito-Lay company, who in 2021 filed a patent for a method to manufacture hopper crystal salt. The idea is that since salt in this form tastes saltier, they can use less salt to produce the same taste and claim 'reduced sodium' in the snack.
